Vegetable & Feta Omlette



1. Mix together 2 eggs, crumbled feta, chopped mint, any seasonings


2. Saute sliced carrots, mushrooms and spinach in a non-stick frying pan with touch of coconut oil and some water (when necesessary, to prevent sticking)


3. Add the egg mixture to the frying pan and shake gently to settle/mix.


4. Gently cook until egg set. If you wish, you could flash it under a hot grill for a couple of minutes to cook the top.
