Lentil flatcakes


A healthy quick snack with nutritious red lentils, inspired by South Indian cooking where lentils are used in their famous dosas.

1. Overnight soak some red lentils in water (quantities and photo to follow!)
2. The next day the lentils will be soft/mushy and the water absorbed
3. Mash briefly until smooth
4. Add any spices/seasoning e.g. chili powder, a little salt and pepper and some chopped chilies
5. In a hot non-stick frying pan, greased with a little coconut oil, ladle in some mixture and smooth flat with back of spoon - you could get 3 lentil flatcakes into a dinner plate-sized frying pan.
6. Gently cook over a medium, about 3 minutes each side.

I served with some lime pickle, Greek yogurt and green leaves.
