Oaty Scotch Pancakes with red berries


1. Mix together 1 mashed banana, 1 egg and some porridge oats to give the texture of a batter. Optionally you can add some cinnamon for flavour.

2. Gently drop big spoonfuls into a lightly-greased hot non-stick frying pan and cook for a couple of minutes on each side.



3. Then arrange on plate and drizzle with honey, and scatter over mixed berries, flaked almonds and any mint leaves. Serve with Greek yogurt.
